I'm a huge fan of the Barefoot Contessa, but, yes, she does love to cook with a lot of butter! But, this lightened up version of one of her famous lemon cakes is sure to hit the spot...

My friend Wendi and I were joking recently about how we'd love to be "Jeffrey" for a few days (aka, Ina Garten's very lucky and well-fed husband). Can you imagine all that amazing food coming out of her kitchen?
